Spinach Rice Hemp Balls
11/2 c. cooked basmati rice
1/3 c. frozen spinach, thawed and squeezed/drained
1/3 c. Asiago or Parmesan cheese, shredded
1 dropperful Enerhealth’s Cayenne Extract, more or less as desired
½ tsp. salt
½-1 c. Enerhealth Hemp Hearts
In a medium bowl, whisk the egg until yolk and white are all one. Stir in the rice, spinach, cheese, cayenne and salt to combine well. Place the Hemp Heart seeds in a smaller bowl. With bare hands, take a teaspoonful of the rice mixture and roll into a small ball or oblong shape, then roll into the hemp seeds to coat the outside of the rice ball evenly. Place each rice ball on a cookie sheet or baking tray about 1 inch apart.
Bake at 375 degrees for 30- 40 minutes, turning over once midway through the baking cycle. Serve warm.
