    Cocoa Mojo Chia Pudding

    1 cup full-fat coconut milk*

    1 cup unsweetened almond milk *

    4 T Cocoa Mojo

    1-2 tbsp maple syrup

    Pinch of Celtic sea salt 0r other sea salt

    1/2 cup chia seeds

    Combine the milks, Cocoa Mojo, maple syrup and pinch of salt in a mixing bowl or a blender.  If using a mixing bowl, whisk vigorously to blend well. If in a blender, pulse on low to mix the ingredients together.  Add the chia seeds and, again, mix well or with just a few brief pulses in the blender.

    Transfer to small jars, serving bowls or decorative serving containers.  Be sure to scrape the sidewalls of the blender well. Refrigerate overnight or for at least 4 hours.

    Add any decorative, complimentary toppings of your choice:  mint, berries, whipped cream, chocolate shavings, coconut flakes.  Bon Appe’tit!

    *Feel free to try other milks of your choice.  Use just almond milk, use just coconut milk, or experiment with cashew milk or hemp milk.

    Researchers Say Eating Chocolate Every Day Can Have Serious Health Benefits.

    Researchers have found a link between daily chocolate consumption and heart health, according to recent findings presented at the association's Epidemiology/Lifestyle 2016 Scientific Sessions. Eating chocolate on a daily basis may improve insulin levels and liver enzymes in adults, according to a study presented at the American Heart Association’s Epidemiology/Lifestyle 2016 Scientific Sessions.

    Researchers studied 1,153 adults, ages 18 to 69 years between 2007 and 2009. Of all the participants, 81.8 percent were classified as chocolate consumers. They found that consuming 100 mg of chocolate daily was associated with lower levels of insulin resistance, serum insulin and liver enzymes, markers associated with heart disease risk. The study concluded that chocolate consumers were more likely to be younger, physically active, affluent people, who had higher education levels and fewer chronic health issues.

    This study is just a small part of a large growing body of evidence discovering more and more health benefits of daily chocolate consumption. Dark chocolate is packed with organic compounds that are biologically active and function as antioxidants. A recent study showed that cocoa and dark chocolate contained more antioxidant activity, polyphenols, and flavanols than other fruits they tested, which included blueberries and Acai berries.

    In a study of 470 elderly men, cocoa was found to reduce the risk of cardiovascular death by a whopping 50% over a 15-year period. Another study revealed that eating chocolate 2 or more times per week lowered the risk of having calcified plaque in the arteries by 32%. Eating chocolate less frequently had no effect. Yet another study showed that chocolate 5+ times per week lowered the risk of cardiovascular disease by 57%.

    The month of January is a real test to those of us that made a commitment to get healthier, lose weight, exercise etc.  My gym representative says that the end of December and January are huge in terms of new members and the gym is hopping, but he also says that by March it will be business as usual with members and activity dropping off.

  • New Research into weight loss, low fat diets are wrong!

    A scientist at Tufts University,David Ludwig, has a 'new' theory on the current causes of obesity. When the statistics showed that even 2 and 3 year olds were getting obese, it was clearly a sign that the root of the issue was something in the environment, not just will power or genetics.

    He found that 'over eating does not make you fat, it is the process of getting fat that makes you over eat!  Sounds a little crazy right?  But when you look at the issue, it makes perfect sense.  He found that the type of foods you eat are the root cause of getting fat.  Turns out all those low fat diets are at issue, they reduce all the good fats and give the carbs a pass(how many refined carbs with added sugar do we see these days-this is the environmental piece).

    He says the best diet is one that has healthy fats such as nuts, olive oil and avocados for example (be careful of some of these oils as hexane is present which means a hydro carbon was used to express the oil) and reduce refined carbs and sugars, read bread, chips and sugary drinks.

    Of course he has a diet book and says that his diet reprograms your fat cells, reduces hunger and get insulin under control.  He is probably onto something don't you think? We have been writing about just this same diet for over 10 years now and produced a line of products to support you in your journey of health!
